roasted garlicy asparagus


A simple and flavorful side dish is a good thing. When you need something quick & easy that is both elegant and flavorful- Garlicy Roasted Asparagus is the perfect dish! Oh and a 1 dish recipe (less to clean!).

The nice thing about Asparagus is that it is available year round but is at it's peak in April. It's no wonder the flavor is spring like - herbal, grassy with a fresh and somewhat sweetness. It is a flavor that goes well and compliments roasted or grilled meat like beef or chicken.

Depending on the variety and time of year and sometimes the store - the size of the asparagus will go from chopstick, to pencil, to jumbo circus pencil size. For this recipe I used the normal pencil size - depending on what you use just adjust the cook time - down for smaller or up for bigger. 2-3 minutes either direction.

Simple Prep: Just rinse - dry and trim. Trimming is necessary because the cut flat end of the asparagus tends to be really tough. There are different recommended methods for trimming - the simplest way is to line the spears up and level them with the side of a chef's knife and trim about and 1 inch off. 


Ingredients
  • Small bunch of Asparagus
  • 2 Tablespoons of Olive Oil
  • 3 cloves of Garlic
  • Salt- 1 teaspoon flaked or sprinkle with table
  • Sprinkle of fresh ground pepper



Steps
  • Preheat Oven to 400 degrees - set rack to middle
  • Wash and dry the asparagus - trim the bottoms of the asparagus - just line them up and chop!
  • Place the trimmed asparagus on a baking sheet
  • Drizzle with Olive Oil
  • Sprinkle with Salt & Pepper
  • Add Garlic
  • (With your hands) Toss the asparagus around in the seasoning
  • Spread the asparagus in a single layer on the same baking sheet




Cook & Enjoy
  • Put the baking sheet in the preheated oven
  • Roast for 8-9 minutes - the edges should be browned - the 'brown' is flavor.
